Castle hospitality and cleaning division are looking for a lead/sous chef to join a small friendly team in a unique licensed bar and restaurant. This family run independent venue is looking for a chef with creative flair that can offer ideas and changes to the way it prepares and serves food. The position would suit an accomplished chef, currently at senior chef de partie or sous level looking to make a mark in a venue that seeks to refresh their menu.
Key responsibilities:
- Running the kitchen - usually a team of three
- Ensuring the kitchen has high culinary standards
- Managing food purchasing and storage
- Maintaining a safe and hygienic kitchen environment
- Helping create new recipes and write menus
- Preparing and cooking food for both the restaurant and for various events.
- Be comfortable working with fresh produce
- Experienced working the grill in a fast paced environment
- Happy to work until 2am on a Friday and Saturday night
What skills do I need?
- A flair with ingredients
- An ability to stay calm when the pressure mounts
- Strong leadership skills to motivate your team
- First rate culinary skills
What qualifications do I need?
Many chefs have got where they are today by training on the job. However, formal qualifications will always help. Useful qualifications include:
- City & Guilds diplomas in professional cookery
- BTEC HND in professional cookery
- A foundation degree in culinary arts
- Health and safety and food hygiene certificates

We are seeking someone with a passion and a love of ingredients. You'll be someone who performs well under pressure and recognises the importance of motivating and leading junior members of staff who may also be working under pressure.
