Job Description

Responsible to: Hotel Manager and Managing Director

Up to £24,000

Driver needed due to location 

 

Castle hospitality and catering division are looking for an experienced restaurant manager to organise and control the day to day operation of the Restaurant, Bar and Lounge service ensuring the best customer experience while adhering to company policies and protecting profit.

 

Main Duties:

 

  • To ensure adequate staffing levels in all areas to the needs of the business while staying within the company ratios.
  • Monitor staff hours and  being aware of costings
  • Ensure all staff is correctly dresses in uniform 
  • Ensuring the areas within your control are set up in readiness for service and to the required standard.
  • Ensure that there are set regimes in place for the cleaning of all areas.
  • Train staff to the required standards this includes induction training and on-going standards training. 
  • Carry out periodic appraisals and set SMART goals.
  • Make customer service a priority anticipating and exceeding the customer expectation.
  • Regularly review service standards and make changes as required to improve the customer experience and formalise these in writing.
  • Prepare the table plans for the restaurant.
  • Ordering of products necessary for the operation of your department this includes paper produces, tea, coffee, wine, spirits, beers, juices, soft drinks, sundries and cleaning products.  This list is not exhaustive.
  • Carry out inventory stock counts as required and recommend purchases as needed to replenish broken or missing items.
  • Manage and control the night porter and ensure all his duties are complete as per his duty sheet.
  • Maintain liquor stock at the appropriate level and make sure stock rotation is taking place.
  • Achieve the agree Liquor GP Margin, and keep wastage to a minimum.
  • Ensure the regular cleaning of the beers lines and keep the cellars and stock areas tidy.
  • Submit for monthly stock take the necessary paperwork regarding wastage, line cleans and transfers.
  • Adhere to safe working practices and food hygiene regulations.
  • Ensure all recharges are done accurately and completely.
  • Adhere to and comply with the Bar till and cash handling procedures.
  • Act as Duty Manager while on shift ensuring all relevant checks have been done via the Duty Manager Check Sheets, Room Check Sheets, and night porter sheets.  As well as dealing with any customer issues and complaints while following the Complaints Procedure and recording the same.  Always try to solve the problem by putting it right before compensation is given.
  • Ensure the safe evacuation of the building should the fire alarm sound while you are on duty.
  • Keep up to date with any functions or private dinning by liaising with the C&B Manager and the function sheets.
  • Attend regular HOD meetings.
