Do you have a passion for fine food in elegant surroundings then maybe this role is for you…?  As Head Chef you will be based in Hastings and be challenged to work closely with the owner to evolve and redesign the existing menu to create a fine dining experience that will encourage the guests to dine in the multiple restaurants within the hotel.  You will be well rewarded with a salary up to £35,000 and can be assisted with finding accommodation if you are re-locating to the area.

The Company – AA 3 Star hotel with 50 bedrooms with a history dating back to 1828, situated in prime position offering unrivalled views with a mixture of traditional hospitality and a friendly atmosphere.  This venue offers multiple restaurants and function space, which is suitable for weddings, wakes & gala dinners.

Role:

  • Manage & lead a small kitchen team in delivering a 1st class service
  • Motivate, train & develop the current kitchen team
  • Devise a fine dining offering for the al a carte restaurant alongside the owner
  • Assist with the recruitment process for future chefs as and when required and to ensure all new starter inductions are complete.
  • Assisting in the production of staff rotas in conjunction with the Business Owner
  • To ensure all compliance with food hygiene, health and safety and cleanliness of the kitchen
  • Plan & develop front of house menus along with organising food for special events, which could be weddings, wakes, gala dinners & afternoon teas
  • Stock management including purchasing & control of wastage
  • To ensure the correct use of equipment and report any maintenance issues
  • Control all operating expenses within the area in line with budgeted GP%
  • Ensure all legislation and company policies are adhered to
  • To make recommendations and planning for changes to product experience and service standards
  • To work as part of the team with the Business Owner to support and cover each other when required

Requirements:

  • Experience at Head Chef Level or Senior Sous Chef
  • Experience in menu development
  • Food Hygiene Level 2 or above
  • NVQ Catering Qualifications
  • Allergen Awareness
  • Experience in monitoring GP and working with budgets

Benefits – The role of Head Chef is offering a very competitive salary of up to £35,000 per year.  You would be required to work up to 45 hours a week over 5 days including evenings, weekend and bank holidays, this would be predominately Straight shifts although there may be occasions where split shifts would be needed.  There is a very good public transport network and a train service, this role would be ideal for someone who is looking to relocate and there would be assistance with getting temporary accommodation.
